Chicken Afritada

Here's another personal recipe I am so excited to share with you guys!

A few days ago I posted this photo of my homemade Chicken Afritada and since then, several people were asking for the recipe.

Of course I couldn't say "NO" to my beloved and fellow foodies so here we go! :)

Prep Time: 10-15 minutes

Serving size: 2-3 people

You will need:

1/2 kilo chicken breasts - cubed

1 medium sized carrots and potato (sliced into cubes)

Half an onion - sliced thinly

3 cloves of garlic - Minced

2 ripe tomatoes (sliced thinly)

Red bell pepper (sliced )

Baguio beans sliced thinly (diagonal)

1/2 cup pure tomato paste

1/4 cup water

2 tablespoons of canola oil

a dash of salt and pepper to taste

Procedure:

1.) In a pan set over medium heat, pour 2 tbsp of canola oil.

2.) Add in onions, garlic, tomatoes and saute until onion turns a bit translucent and the garlic light brown. Add in chicken cubes and stir well.

3.) Add water, a bit of salt and pepper. Cover to simmer for 3 minutes.

4.) Add in carrots, potatos and beans.

5.) Cover again and let it simmer for at least 5 minutes or until vegetables are tender but not soggy. Firm to bite is ideal.

5.) Add tomato sauce and simmer for 2 more minutes, stirring occasionally to avoid the sauce from sticking to the bottom of the pan. It's also best to turn the heat lower. By this point, you can add more salt and pepper or a little bit of sugar to suit your taste. Just eyeball it and trust your taste buds :)

6.) Add red bell pepper last, around a minute prior to turning off the heat.

7.) Serve with steamy and hot rice, Enjoy!
