Homemade Tacos

This homemade taco recipe is great for movie nights with friends and family. The sweet, sour, salty and spicy flavors works well together, everyone will surely be coming back to the table for more. This recipe is 80 % vegetables and only 20% meat.

Serving size: 4-5 people

Prep time: 30-45 minutes

What you will need:

1 box Store bought whole wheat hard shell tacos

For the taco filling:

250 grams extra lean ground beef

5 ripe tomatoes diced

2 tablespoons of minced onion

1 tablespoon minced garlic

1 teaspoon salt

1 teaspoon ground black pepper

1 teaspoon garlic powder

1 tablespoon olive oil

1 cup tomato sauce

1 tablespoon brown sugar

1/4 cup water

1 medium sized eggplant diced.

Iceberg lettuce shredded thinly

Grated low sodium cheddar cheese

Tomato salsa

Tabasco habanero sauce

Procedure:

1.) In a deep non stick pan, drizzle a little bit of olive oil add minced garlic and onion.

2.) Add ground beef and mix well. Add in salt, ground black pepper and garlic powder.

3.) Let it simmer until beef turns light brown.

4.) Add diced tomatoes, eggplant, tomato sauce, sugar, water and stir well.

5.) Cover and simmer for 6-9 minutes stirring occasionally.

6.) Once the tomatoes and eggplant softens, mix well and turn off the heat. Set aside to cool.

7.) Assembling time! take one hard shell taco and scoop in the filling, add in shredded lettuce, tomato salsa, grated cheese and drizzle Tabasco sauce on top.

8. Enjoy!
