Pancit Guisado (Egg noodle stir-fry)

Egg noodle stir fry also known as "pancit guisado" is a Filipino staple. It's my personal favorite too. Whenever I crave for some, I simply cook it at home. I intended to use more vegetables in this recipe because that's how I like it.

Serving size: 1-2 persons

Prep time: 5-7 minutes

What you will need:

1/4 kilograms of egg noodles

1 tsp. salt

1 tsp. pepper

1 tsp garlic powder

2 tablespoons oyster sauce

1/2 cup water

2 tablespoons cooking oil

1/4 kilo lean meat - chopped into small and thin pieces (chicken or pork)

1 tsp minced garlic

half an onion sliced thinly

Vegetables

1/2 cup cabbage shredded or sliced thinly

1/2 cup carrots sliced thinly

1/4 sayote sliced thinly (optional)

1/4 cup spring onions

Procedure

1.) On a medium sized wok set on medium heat, add 2 tablespoons oil.

2.) Add in minced garlic, onion and stir until garlic turns light brown.

3.) Add in meat, salt, ground pepper, garlic powder and mix.

4.) Add water, mix well and cover to simmer for around 2-3 minutes.

5.) Add in vegetables (carrots and sayote) except the shredded cabbage.

6.) Cover again, let it simmer for approximately 2 minutes on low heat until vegetables are cooked.

7.) Add in egg noodles, and mix well. You can add a bit of water if the noodles tend to absorb most of it. Just make sure you don't put too much or else you will end up with a soup. Lol :)

8.) Turn heat to the lower setting and cover the wok to cook the noodles. It cooks up really fast so make sure to check if often. Once the noodles is almost done, add oyster sauce and mix well.

9.) Add cabbage and mix well. Cover once again for at least 1 minute before serving.

10.) Sprinkle with chopped spring onions and serve while hot.

11.) You can add a dash of calamansi juice for added flavor.
