Baked Pork Ribs in Garlic Barbecue Sauce

Perfect for lunch or dinner, this baked barbecue ribs will make you come back for more. A perfect compliment to roasted vegetables or even rice. Get your apron ready to whip up some good tasting meal in the comforts of your home.

Serving size: 2 persons

Prep time : 30-45 minutes

What you will need:

5-6 pieces of young pork ribs cut individually.

1 teaspoon salt

1 teaspoon garlic powder

1 teaspoon ground black pepper

a dash of dried thyme

For the sauce:

1 tbsp brown sugar

2 tbsp tomato ketchup

3 tbsp water

a dash of salt

3 cloves of garlic, minced

1 teaspoon light soy sauce

Parsley for garnishing

Tabasco Habanero sauce (optional if you don't like it spicy)

1/2 tbsp olive oil.

Sidings:

1 whole medium potato sliced into wedges

half of a sweet corn on cob split lengthwise

Salt and pepper to taste

1 tbsp olive oil

Procedure:

1.) Preheat oven to 180 Celsius

2.) Season ribs with salt, pepper, garlic powder, dried thyme and rub to distribute the flavor evenly.

3.) Season potato wedges and sweet corn with pepper and salt too.

4.) line a regular sized baking sheet/pan with aluminum foil or baking paper and arrange ribs and vegetables accordingly. Make sure to place it in the middle of the baking sheet to avoid burning. Sprinkle vegetables with olive oil and bake in the oven for 25-30 minutes checking occasionally making sure vegetables are not overcooked. You might need to take the vegetables out first if you think its cooked but the ribs needs a little bit more time. You can crank up the temperature higher once vegetables are taken out.

5.) Once the ribs are cooked, removed from the oven and set aside to cool down.

For the Sauce

Pour olive oil into a nonstick pan and sautee garlic bits until it turns golden brown. Turn down the heat if needed to prevent the bits from burning. Add water, soy sauce, tomato sauce, brown sugar and stir. Season with salt to taste and add Tabasco Habanero sauce if you like it with a bit of spicy kick. Add more of the ingredients to suite your taste accordingly. If you follow this entire recipe the sauce will be leaning towards the sweet and spicy side. Add more salt if you want it a little bit more salty. Once the sauce thickens, add the baked ribs and toss. Plate it with the baked potato, sweet corn and garnish with parsley, Enjoy!
