Homemade Quesadilla

Who wouldn't love a great tasting quesadilla you can make at home with ingredients you can easily find in your pantry.
Serving size: 2- 3 people
Prep time: 10-15 minutes
You will need:
2 Store bought fajitas/soft shell tacos
1/4 kl. ground lean beef
1 tomato, diced
2 tbsp cooking oil/olive oil
Half of a medium sized onion,diced
3 cloves of garlic, minced
Salt and pepper to taste
Lettuce/ cabbage (shredded)
Tomato salsa
Tabasco hot sauce
Tomato ketchup
20 grams cheddar cheese, grated finely
Procedure
1.) In a pan over medium heat, pour olive oil.
2.) Add minced tomatoes, onions, garlic and cook until garlic turns golden brown and the onions translucent.
3.) Add ground beef and season with salt and pepper. You can add a little in the beginning and adjust as you go to suit your taste.
4.) Add a bit of water (around 1-2 tbsp). Let the beef cook, cover with a lid and stir occasionally. Once the beef turns dark brown and the water has completely evaporated, then its cooked. You can remove the pan from the heat and set aside to cool down.
5.) Heat up fajitas. You can use a nonstick pan, a toaster or a microwave. When using the microwave just cover it with a microwavable plate on top to avoid it from getting burnt.
6.) Time to assemble your quesadilla! using a spoon, scoop out a hefty amount of ground beef mixture and lay on top the fajitas evenly. top with lettuce or cabbage and tomato salsa. Sprinkle a little bit of Tabasco hot sauce then lastly add grated cheese. Cover with another Fajita and sprinkle tomato ketchup on top. Slice evenly into 4 equal parts.
